Vinegared Rice Stuffed in Fried Bean Curd
▲Ingredients: 600g rice, A(630g water, 2 dried kelps, 2” long, 1/4tsp salt, 1Tbs rice wine), 4cups rice vinegar, B liquid mixture(2Tbs sugar, 1/2Tbs rice wine, 1/2tsp salt, 3Tbs vinegar, 1/2Tbs lemon juice), 12 fried bean curd, C(kelp water 1/2cup, 1/2Tbs sugar, 1/4tsp salt, 1tsp soy sauce, 1/2Tbs rice wine), 50g Shiitake Mushroom, finely cut, D(1/2Tbs sugar, 1/2Tbs soy sauce, 1/2Tbs rice wine, kelp water 1/4cup) 50g carrot, chopped, E(2Tbs kelp water, 1/2tsp sugar, 1tsp rice wine, 1/8tsp salt), 2 chopped pickles, 1 1/2Tbs black sesame seeds, vinegar soy sauce(2Tbs soy sauce, 1/2Tbs vinegar, 2tsp lemon juice, 1/4tsp wasabi)
▲Directions: Steam rice. Cut each fried bean curd in half diagonally. Blanch in boiling water. Take the bean curd out and gently press down to get the oil out.(don’t smash) Mix ingredients A together and boil down for 10 minutes. Stir well. Mix Shiitake mushrooms with ingredients B. Put into a pot and boil down for 5 minutes. Mix carrots with ingredients C and boil down for 5 minutes. Mix steamed rice with Shiitake Mushroom, carrots, pickles and black sesame seeds. Spoon rice mixture into the fried bean curds halves. Serve with vinegar soy sauce.
