Persimmon Punch

▲Ingredients: 130g ginger, peeled and sliced, 120g cinnamon sticks, 2 cup brown sugar, 3 Tbs honey, 14 cups water+2 cups, 14 dried persimmons, pine nuts
▲Directions: Put sliced gingers into a pot and add 7 cups of water. Boil for 20 minutes over medium heat. In another pot, put cinnamon sticks and add 7 cups of water. Boil for 30 minutes over medium heat. Discard the ginger and the cinnamon sticks. Mix together.(Boiling gingers and cinnamon sticks separately produce better taste, but you can boil them together.) Add sugar and boil again. Let it cool down. Sift the liquid using a sieve and discard the residual. Add sugar and honey to the remaining liquid and boil again until it foams. Remove from heat and let it cool. Remove stems from dried persimmons and put them in liquid. Let it sit 4~5 hours. When served add pine nuts.
