California Style Kimchi
▲Ingredients: 2 large heads(7pounds) cabbage, 12 ounces kosher salt,(5 ounces for brine, 7 ounces for sprinkle cabbage) 1.2 L water, 1 white radish(daikon), 2 Welsh onion, large type, 1/2 cup salted shrimp, 5ounces ground red pepper, 1/2 Tbs sugar, 5 Tbs ground uncooked sticky rice, 1 1/2 cup water(1cup for sweet rice soup, 1/2cup for kimchi soup), 1 Tbs whole roasted sesame seed, sauce A(7-8 cloves garlic, 1.4 ounces ginger, 1 chopped onion, 1/2 Korean pear, 1/2 apple, 3.5 ounces uncooked small shrimp)
▲Directions: Cut cabbages lengthwise. Mix kosher salt and water in a large bowl and soak cabbages in the brine for 1-2 minutes. Take out from the brine and sprinkle salt between cabbage leaves and let it sit for 2-3 hours. Remove and rinse cabbage in running water. Place them in a strainer for about 2 hours to drain water from the cabbage. Cut radishes into 1/2 inch cubes. Chop green onions 2 inches long. Put ground sticky rice into a cup of water and then boil in an uncovered pot for 2-3 minutes. Remove from heat and allow to cool. Combine all Ingredients in sauce A into a blender and chop for 1 minute. Add salted shrimp and stir well. Mix with sweet rice soup, radishes, red peppers, sugar, onions and sesame seeds in the large bowl. Allow the mixture to rest for 30 minutes. Rub mixture in between cabbage leaves. (If the seasoning tastes bland, add a little more salt and mix.) Distribute the kimchi into any glass jars to store. Using a 1/2 cup of water, rinse out the bowl and pour the water into the jars of kimchi. (If you have more than one jar, make sure you distribute the water into each jar evenly.)
